An intense taste that is unique to such a crab. You may have tasted the normal yellow roe crab’s roe before, but when you get an opportunity to put a spoonful of this roe into your mouth, we guarantee the only word leaving your mouth is ‘Shiok

Originally known as Butter Crabs (黄油蟹), these crabs develop a deformity that only occurs when a female crab waiting to mate is left out in the sun and her roe starts melting under extreme hot temperatures. When the roe melts, a golden-orange layer forms around its head with a gelatine texture that is extremely delicious. The melted roe seeps into the crab’s meat and soft bones as well, effectively seasoning the entire crab from within.

Here at Le Petit Butchery, we can count on one hand the amount of times we’ve encountered this crab. This amounts to its rarity and even when the conditions are ideal for these crabs, very few make it to us via our suppliers.

Preparation Method: Live crab steamed with top grade ginger.


Serving Suggestion: Thaw for 2 hours at room temperature or thaw it overnight in the chiller.

Serve with your preferred dipping sauce such as vinegar, soya sauce or even belacan chilli!
